Hey Guys!

I'm back with another enticing food post!  While at my grandma's for Thanksgiving I made pecan candies better known as pecan pralines.  It's a super easy recipe, a tad bit time-consuming, but so worth it!!!  
Here's what you'll need:
1 can of evaporated milk
Vanilla Extract
2 cups of sugar
Pecans
2 TSP butter (optional)
1.) Add the 2 cups of sugar to a large pot.  
2.) Add your can of evaporated milk

3.) Put your pecans on a tray and put them in the 350 degree oven for 5-7 minutes so they can roast slightly. 
4.) Add a teaspoon of vanilla extract to your mixture
(If you want to add 2 TBSP of butter at this point you can.  I opted not to.)

5.) Here is where the process gets tedious.  You MUST stir this mixture continuously for 25-30 minutes. 
 You don't want it to burn and stick to the bottom of your pot. It will start to thicken which is what you want.

6.) Once your mixture has thicken up, add your pecans. You can cut them into smaller pieces or add them whole.  I like them whole. 

7.) At this point you want to move quickly.  Stir your mixture.  

8.) On a cookie sheet covered in parchment paper, add dollops of your mixture to cool.
9.) In about 15 minutes once they cool a bit, you can enjoy your homemade pecan pralines!
These were gone in minutes and you'll love this recipe too!  It doesn't call for a lot.  If you decide to try it, please let me know how it turns out for you.

Hey Lovelies,

I pray everyone's week is off to a good start!  I am still recovering from the large amount of good eats I've consumed over the last few days.  I am back to work for a few more weeks and then I'll be off for more fun again!  That's one of the perks of being an educator!!!  Here is my Teacher OOTD!!!

The weather is so wishy washy here in Florida!  35 degrees one day, 60 the next....I can't.  I'd rather have cooler weather during this time of year.  Holiday time that is.  Christmas doesn't feel right when you can go outside with shorts on.

Yesterday I had the day off and that is ALWAYS a good thing, especially after having a long holiday break.  Since it was nice and chilly outside, I thought it would be a great idea to take a stroll downtown and try out a fairly new restaurant that opened up back in September called Pho. A Noodle Bar!


So for those of you who may be wondering what the heck "Pho" is let me enlighten you.  Pho (pronounced "fuh" like "duh")  is a Vietnamese soup with rice noodles, bean sprouts, other veggies, and meat (if you like). 
As always, I think ambiance is everything when dining in a restaurant and I loved the decor.  Nice hard wood floors, exposed ceiling, and high top tables (at least where I was sitting).  

I had the China Mist Orange Blossom white tea which was very refreshing.

These little spring rolls were DA BOMB!!!  I could have had eaten plenty more of these bad boys!  They come vegetarian style also!


Here is my bowl of Pho!  It comes standard with rice noodles, seasoned beef broth, onions, scallions, and cilantro, bean sprouts, and lemon as a garnish.

You have the option to build your own bowl of Pho with up to 3 meats so I chose shrimp, chicken , and flank steak.

 This was a small bowl.....which was actually quite large so I took almost all of it home with me.

This bowl of Pho was just the tool to warm me up but my only complaint is that it needed a little more seasoning.  The tables come equipped with Hoisin sauce and Sriracha, but that really didn't do the trick for me.  Perhaps if the protein was seasoned first before being added to the dish.  That's ok because it was still tasty and I would definitely be willing to go back!

I pray that everyone had a fantastic Thanksgiving holiday!  I most certainly did.  I traveled to Louisiana to spend the holiday with family.  On my way to grandma's, I decided to spend a few hours in the French Quarters of New Orleans!  
What's a trip to the NOLA without beignets, right!??! Soooo... my first stop was the infamous Cafe Du Monde!  If you have ever heard of foods synonymous with New Orleans, you've probably heard the words gumbo, jambalaya, pralines, and of course beignets ("ben-yays").  Cafe Du Monde is the original French market coffee stand that has been in existence since 1862.  The fact that they've been around so long ought to tell you something about their likability!  They only serve these delectable French-style doughnuts and coffee (soda and OJ too)....that's got to be one of my favorite combinations!  I got the standard order of beignets, which comes with three, and a cafe au lait which is coffee mixed half and half with hot milk.
These light and airy beignets are covered with icing-powdered sugar!  You'll make quite a mess but you're provided with plenty of napkins and water. 
 Even though they're light and airy, I was only able to finish two of the three. Well...actually, I had to stop myself from eating them all in an effort to save room for my lunch later!  If you're ever in New Orleans, please stop by Cafe Du Monde for this sugary treat!  You'll be glad you did.

After I left, I did a little shopping and stopped for a poboy later on the afternoon.  My mission was accomplished for those few short hours I spent in the French Quarters!  I could have gotten gumbo and etoufee but I knew my family would have those things available on hand during my vacay. Hey Guys,

If you like PF Changs Asian Bistro, you might enjoy their spin-off Pei Wei Asian Diner.  They opened up here in Jacksonville last spring/summer and I finally got the opportunity to try them out over the weekend.

I liked that they had a menu outside for you to look at before walking in.  I think all restaurants should do this.  This way you can decide if you really want it before walking into the establishment.

When I walked in their were more menu boards to look at while you waited in line and the restaurant had a very open feel.  I liked the decor.  I also like that you order your food at the front counter, retrieve a number, seat yourself, and then receive your food. They also have those touch screen Coke machines that I really like.  I got their Chai Tea which was refreshing!

As an appetizer, I ordered these crab wontons.

To be completely honest, I would've been satisfied with just the wontons.  They were full of crab and the sweet duck sauce was an amazing compliment to the wontons!  I wish I would've ordered more than two.  They were really tasty!

This was my main entree, Orange Peel Chicken.  Looks good does't it?  Welllll.... I don't know what I was expecting but....this wasn't it!  Now it wasn't bad, but it certainly wasn't the best I've had either.  It sort of reminded me of the frozen bags of PF Chang's Orange Chicken that I've bought from the frozen food aisle in the grocery store before.  I don't know...maybe I was expecting too much.

Overall I'd have to give Pei Wei a C.  The crab wontons saved the day and for them alone, I'll go back and give them another shot.  Perhaps try a different dish!  If you're interested in trying them and do so by Wednesday (11/21) you can receive 20% of of your meal by pledging to help Pei Wei donate to local food banks.  I found this out via their website.  I wish I would've been informed at the counter because I would've donated for the cause.

My weekend was pretty cool!  I did a photo shoot, dined out with the boo, and best of all relaxed!  Here is one of my outfits from the weekend featuring this really cute jacket I bought last winter.

The jacket doesn't have a collar but I really LOVE how the vest I wore underneath made it appear as though  it did.

These have instantly become my favorite booties for the season!  They are so comfortable it's unreal.  I rocked some gold accessories with this look.  The earrings are from H&M, the ring and smaller bracelets are from Forever 21, and the large spiked bracelet is from........the beauty supply store!!!  Can you believe it!?!?!  I only paid $1 for it!!!

I don't know if you can tell but the side panels of the tights are leather too so the whole look kind of flows together!  Still rocking the natural hair!  It's growing on me quite a bit!  I enjoy it!

I Jacket 2 ways

Hey Fellow Foodies,

It's been a while since I last did a restaurant review hasn't it?  Well here ya go!  I have been in a sandwich and soup sort of mood lately and on my way to Subway I thought "Hey wait!  Let me try
Jimmy John's!" 
 The last and first time I had Jimmy John's was my freshman year in college several a couple of years ago ;) and I remember not thinking much of them.  Jimmy John's just opened up at the Town Center near my house so I figured why not give them another shot. Plus, I have been hearing so many advertisements on the radio about them being "So Fast You'll Freak".  
They weren't lying about that!  By the time I ordered my sub and filled my cup up with a drink, my sandwich was ready to go.  It had to be a minute at most! 

I ordered the "Bootlegger Club"  that came with roast beef, turkey breast, lettuce, tomatoes, and mayo.  Somehow I missed the fact that this sub came with out cheese.  Back in the day that would've been just fine, but since I've gotten older, I don't mind a little cheese every now and again so I definitely missed it in this sub.

I got the meal that came with a drink and "Jimmy Chips".  I got the BBQ chips and I liked the fact that the chips are cooked in peanut oil and there aren't preservatives!  
SOoooooo, here's the deal....
While yes, service was ridiculously fast, the sandwich was just plain ok.  I wasn't overly impressed.  I think it may have tasted a little better toasted with cheese, but the sub I got didn't float my boat.  Will I go back???  Maybe, if I'm with a group of people who want to go to Jimmy John's or if it's catered.  On my own, probably not.

I guess sometimes going with what you know is best so Subway and FireHouse will continue to have my heart in the sub department.

I kind of snuck and wore jeans today at work lol.  Jean aren't really allowed except for on Fridays but I think I was able to get away with it because they're kind of dressy trouser jeans.  I got these from Banana Republic.

Layers and Sweaters and Boots, Oh My!

I am back at ya with another Teacher Look of the Day!  The temperature has dropped significantly here in Florida and we all know what that means.....Layering, Sweaters and Boots, Oh my!!!

I'm still shopping the closet and this is what I came up with this morning.  I remember my mother layering my shirts under sweaters as a kid and I absolutely hated it!  It's funny how your preference for certain things change as you mature.  I added a my chambray blouse first seen here under this pink sweater I bought ages ago from Ross and viola!  I loved it! I kind of snuck and wore jeans today at work lol.  Jean aren't really allowed except for on Fridays but I think I was able to get away with it because they're kind of dressy trouser jeans.  I got these from Banana Republic.
