Foodie PenPals

Hey Dolls,

I recently participated in Foodie Pen Pals over at The Lean Green Bean and it was so much fun!  If you're a foodie like me, you'll love this.  You get paired with someone within the country and send them a box of goodies by the 15th of the month.  Details are at the end of this post.

I was paired with Azia from Mamas Got a Big Belly and Azia Said What!  She wasted no time finding out if I was allergic to anything and the things I enjoy to eat!

She sent me really cool stuff from her hometown in Minnesota!  Including a Minnesota Vikings Coozie for the Buddy's Orange soda pop!!!  I also got a lot of tea which I LOVE, chocolate covered bite-size cookies, Cashew trail mix, A taco mix that will come in handy if I decide to have a Super Bowl party this weekend, and my absolute favorite item in the box, Dutch Caramel Waffle Cookies!  Those things are the bomb!

The Lean Green Bean
This was first time participating and I really enjoyed it!  I look forward to doing it again and if you're interested in becoming a Foodie Penpal yourself, here are the details:

  • On the 5th of every month, you will receive your penpal pairing via email. It will be your responsibility to contact your penpal and get their mailing address and any other information you might need like allergies or dietary restrictions.
  • You will have until the 15th of the month to put your box of goodies in the mail. On the last day of the month, you will post about the goodies you received from your penpal!
  • The boxes are to be filled with fun foodie things, local food items or even homemade treats! The spending limit is $15. The box must also include something written. This can be anything from a note explaining what’s in the box, to a fun recipe…use your imagination!
  • You are responsible for figuring out the best way to ship your items depending on their size and how fragile they are. (Don’t forget about flat rate boxes!)
  • Foodie Penpals is open to blog readers as well as bloggers. If you’re a reader and you get paired with a blogger, you are to write a short guest post for your penpal to post on their blog about what you received. If two readers are paired together, neither needs to worry about writing a post for that month.
  • Foodie Penplas is open to US & Canadian residents. Please note, Canadian Residents will be paired with other Canadians only. We’ve determined things might get too slow and backed up if we’re trying to send foods through customs across the border from US to Canada and vice versa.

What's Cooking With Trice: Chicken Flautas

Hey Dolls!

So are any of you as crazy about Pinterest as I am?  Being the food lover I am, I'm constantly on the hunt for new recipes to try and Pinterest is my go to for pinning new meal ideas.  A few nights ago I decided to give on of the recipes on my Pinterest board a try, Chicken Flautas!

They turned out as delicious as they look! 

* Boneless, Skineless Chicken Breasts (About 4)
* Baby Spinach 
 * Chicken Stock
* Burrito size tortillas (About 4-5)
* Mexican Blend Cheese
* Seasoning of Choice
* Jalepeno

1.) Season your chicken and poache in a skillet with chicken stock.

2.) While your chicken cooks, cut up your spinach to make 2-3 cups (It really shrivels up to nothing when it cooks).  If you have a jalepeno, chop it up and add it along with the spinach to a skillet with a little chicken stock and cook it.  I used green pepper sauce because I didn't have a jalepeno.

3.) After your chicken cooks, let it cool for a few minutes then shred it with 3 forks.  At this point you can add a little more seasoning to taste.

4.) After you shred your chicken, cut your tortillas in half, and prepare a large baking sheet for assembly.

5.) On the long edge of the tortilla, spoon 2-3 spoonfuls of the chicken mixture, cheese, and spinach.  Roll it towards the curved edge.

6.) You should have 8-10 flautas.  Brush the top of each flauta with olive oil spread and put the sheet  in a 450 degree pre-heated oven and bake for 10-12 minutes.

Here is the end product and the best part about it is that they are low in calories!  They were yummy!

Teachers Have Style Too! "Oooh Can I Feel Your Shirt?"

Hi Dolls,

How was your weekend?  Mine was pretty good.  I participated in the MLK parade here in town yesterday and I was so happy to see so many people spend their "day off" honoring Dr. King.  The weather here is dropping by the day and this morning was pretty chilly!  Here is what I wore to work.

These boots are the boots that I wore a few posts back that you guys didn't get to see.  They have quickly become my favorite pair of boots for this winter.  They're stylish, flat, and comfy.

Alllllll day long, and I mean from children to adults, I kept getting "Oooh can I feel your shirt?"  
Ofcourse my response was "!"  Had I said yes, people would've been "feeling me up" all day!!! HAHA I don't think so.  I do really love this sweater though and the faux fur is what attracted me to it.

Teachers Have Style Too!: "Nothing to Wear"

Hey Dolls,

It's finally Friday!  I don't know about you but I am itching for summer or at least Spring Break!  Haha!  So it was seriously 80 degrees last weekend and today it's 45 degrees.....what's really going on? Anywho, here is my work OOTD!

I was in another one of those ruts where I starred at the clothes in my closet and proclaimed that I had nothing to wear. LOL!  This top had been hiding in the back of my closet because I swore I would never wear it because of the gathered mid-section (reminds me of maternity wear).  I decided to pull it out and tuck it in my favorite high-waisted pants and it worked!

You can see what I'm talking about in the above picture.  I tried to hide it with the belt.

These pants are so long, you can hardly see the heels but they are my gold-tipped "Kolfinna" booties from ShoeDazzle, seen here!  Love these all of the shoes on ShoeDazzle!!!

Teachers Have Style Too!: "Work Photoshoot"

Hi Dolls,

I had fun taking my OOTD pictures today!  Our media specialist asked if she could use her fancy-smancy camera to take my pictures and ofcourse I obliged!!!  I felt like I was on a photoshoot and the quality is amazing!!!  Here's what I was wearing today!

I was going to be doing a lot of running around today so my flats were the inspiration for the whole look for today.

Soooooo, I think I'm going to harass our media specialist to take my pics every week.  LOL!  Until I can get me a camera that takes pictures this nice.

O.C. Whites Restaurant Review

Hi Dolls,

How was everyone's weekend?   I enjoyed spending the weekend with one of my good friends Natalie who's getting married next month at her Bridal Shower/Bachelorette Party!  Unfortunately, I don't have very many pics from the party but I do have some of the food from the Bachelorette Party Dinner.

We went to a restaurant in St. Augustine called O.C. White's Seafood and Spirits.  The restaurant itself reminded me of an old house.  The ambiance was relaxed and there was live music which is always nice.

Ok, on to the food.  There were a lot of us so I only took pics of 3 of our dishes.  Now I love me some seafood, however, the food here left me sorely disappointed.  At least my dish did, and I'll tell you why in a few.

This was the Smoked Salmon dish that one of the bridesmaids ordered.  It came with salmon of course, capers, cream cheese, tomatoes, onions, and toast points.  I thought it looked pretty good and she said it was tasty.
This was my dish....Crabcakes.  Now I love a good crabcake and this would've been good had it not still had shells from the crab in the crab cake.  I really wanted to like it but when I bit into shell not once but twice, I was completely turned off from the dish and the restaurant.  Especially with the prices being what they are, you'd expect them to make sure there are no crab shells in the crab cakes.  BUMMER!!!
This was Natalie's dish, Grilled Mahi sandwich that she describes as tasting "very healthy".  I'm not sure what she meant by that, but judging off the looks of the dish, the fish looked flavorful to me.  Unfortunately, I don't think I'll be going back to O.C's.  Crab shells in the crab cakes is unforgivable.

Here is what I wore for the evening.  My pics have been coming out really grainy lately so this is the best one of me and unfortunately you can't see my boots.  We were in St. Augustine, historically known as the oldest city in Florida, and if you know about St. Augustine, you know there are lots cobblestone roads.  We did a lot of walking and even though you can't see the boots, they were flat.  I'll be sure to take another outfit picture soon with the boots so you can see them.  They're my new favorite boots.

So Live Your Life!!!!

Hey Dolls,

This post is going to be a little different from the norm, but I just had to share with you all!

So guess what I did on the last day of 2012???  Yep, that's right!  I went sky-diving!  This is something I have ALWAYS wanted to do at least once during my lifetime.  It is definitely one of the items on my never ending, ever growing "Bucket List"!!!

Come along my for the ride!!!
Me and my instructor, who reminded me of Dennis Quaid. LOL!  He was great at taking the edge off on our quick journey to 15, 000 feet in the desert air!!!  He kept me laughing!
The higher we got, the colder it got, and the more I kept saying "Dang, how much higher are we gonna go???" LOL!
Surprisingly, the only time I really got the butterflies was when they opened that door!  The nervousness only lasted a split second because the next thing I knew, I was free-falling to the earth! HA!
No turning back at this point!!!
Lets' GO!!!
"Ohhhhhhh Shizzleeeee"!!!!!
I'm flying!!!!!!!
It was so exhilarating and definitely an experience that I'll never forget!
We were free-falling for about 30-45 seconds before my instructor pulled the parachute.
At that point I got to enjoy the view in slow motion.  We were just drifting ever so calmly. LOL!
And, there's the landing site!  And guess what else???  I'm still here in full effect! Lol!
All in all it was an amazing experience!  If any of you were considering sky-diving, I say go for it!!!  We've only got 1 life to live and do all the things we want to do so why not have fun!!!

No Heels & The Maple Street Biscuit Company

Hey Lovelies!

I recently picked up this really pretty peplum sweater from H&M!  I think the looked would've been a bit more polished with heels, but you know what.....someday's a girl just doesn't feel like it. LOL!  Today was one of those days.  Just focus on the top half of this outfit :).
Strangely enough, my supply of flats is quite small so to make my black and white flats work with this look, I added a black and white necklace and earrings!  Nevertheless I got several kudos from my teenage fashionistas at work!

In other news:  This past Saturday was an absolutely gorgeous day in Jax!  Although it took me until 12pm to get my tail out of bed, I finally decided to throw on some clothes and venture out to San Marco for a little inner city trekking.

While there, I passed by this restaurant that had a line almost out of the door and that instantly grabbed my attention.  When I saw that the name was Maple Street Biscuit Company, I was SOLD!!!  Anyone who knows me well, knows that I LOVE biscuits so this couldn't be a bad thing!
I saw this sign but didn't think much of it until I got inside and placed my order.  Instead of calling your order number, they ask you whatever question is on the board for the day and then call out your answer when your order is ready.  Cool huh?  My answer was "Florence, Italy"!

The space was pretty cool.  I like how some of the tables were so large that more than one family could fit.
I don't know about you but, I've never heard of Maple Mustard....well they have it here for $9!
The menu was filled with yummy biscuit treats ranging from "The Garden Bird" a biscuit with fried chicken, collard greens, and hot sauce, to the "The Chicken Club" a biscuit with fried chicken, lettuce, tomatoes, and ranch dressing.  I love Chick Fil A, buttttter ummmm....these chicken biscuits right here........WOW!
I went with The Sticky Maple:  A delicious fluffy biscuit with tasty fried chicken, pecan wood smoked bacon, drizzled in maple syrup.....I know..........I know....oh the calories.  It was so worth it though because it was soooooo good!!!
They also have desserts like pecan pie and these yummy cinnamon pecan biscuits.  I got a cinnamon pecan biscuit to go.  It was very tasty.  I wish I had a cup of joe to enjoy with it.  Next time, I'll try it that way.

Though I enjoyed every morsel of my sticky maple biscuit,(yes, I ate the whole thing) I will eat at The Maple Street Biscuit Company sparingly to conserve my waistline. LOL!  They were a treat nevertheless and I shall return.
