Hi Dolls, 

Some of you may know that I'm a Texas girl living in Florida!  So when I heard that Chuy's was opening up at the St. John's Town Center, I was pretty excited as they originated in Austin, TX.  I attended the Charity media event before the Grand Opening last Monday and it was a blast!  The food was amazing, the service was impeccable, and the decor was so fun and vibrant!  Maybe I missed the memo but they seriously have a thing for Elvis!   You'll have to go and see what I mean for yourself!  They have Elvis paraphernalia everywhere, hub caps and colorful papier-mache-ish looking fish hanging from the ceilings, it's a hoot!  Besides loving the decor, the food was outstanding.  I'm seriously going to have to keep myself away from there if I want to keep this waistline in check!
One of my favorite features about Chuy's is the Chihuahua Bar!  It may be due to me being a former Chihuahua owner but I love the concept, nevertheless.
Patrons can donate a picture of their pooch in a frame and Chuy's will hang it up in the Chihuahua Bar.  So cute right?!!?!!?  Plus you get a free appetizer for bringing in the picture.  I love it and you will definitely see my dog on the walls there soon!  I'm bringing a framed photo of her next time I go!
So if you're not quite familiar with what "Tex-Mex" food really consists of, let me help you out!  It's actually quite simple.  It's a combination of flavors from New Mexico, Mexican border towns, and Southern Texas.  Chuy's is known for these flavors and for making everything fresh daily!  I love their fresh, never frozen concept.  You can even watch them roll out the tortillas in house! Everything that we had that night was delicious, from the food, to the drinks, and incredible dessert.  
The combination grilled steak and chicken fajitas came out sizzling on the plate with aromatic peppers and onions.  It was served with three handmade tortillas, lettuce, guacamole, pico de gallo, cheese, Mexican rice, refried beans, and sour cream.  The steak and chicken had and incredible flavor.  With all the fixings, it was the perfect fajita.
This was the "Big As Yo' Face" ground sirloin burrito that one of my friends ordered.  It was made with a 12'' flour tortilla, stuffed with refried beans, cheese, and meat of course. It also comes with your choice of Mexican rice or green chile rice.  He said this dish was good but very spicy!
What's tex-mex without enchiladas!  Their enchiladas are rolled fresh to order with homemade corn tortillas, rice, and charro or refried beans.  
This was The Elvis Presley Memorial Combo...I told you, they've got a serious "Jones" for this guy.  It came with quite a bit of food.  One beef Tex-Mex enchilada, a cheese Ranchero enchilada, chicken Tomatillo enchilada, a seasoned ground sirloin crispy taco, and homemade tostada chips dipped in chile con queso.  Whew! That is a mouth full, literally and figuratively!
So no dinner out with your favorite people is complete with out drinks so we happily indulged!  We all chose to get a signature drink from the menu.  The King's Punch was definitely Texas sized (because everything is bigger there, ya know)!  It's made with Mount Gay Eclipse rum, Malibu rum, pineapple, orange, and lime juice with a splash of grenadine.  
This was the Texas Martini.  I love that it's served with the Chuy's signature shaker so you can refill a time or two.  This drink was delicious.  It's made with your choice of top shelf or premium tequila, Cointreau, Grand Marnier, or Patron Citronge.  My favorite part is the jalepeno-stuffed olives and salted rim that accompanies the drink perfectly!  
Last but certainly not least is the classic Pina Colada.  It's the perfect summer drink made with a blend of 1800 Coconut tequila, Malibu rum, cream of coconut, pineapple, and orange juice.
By the time we finished eating and drinking, we were stuffed but our waiter insisted we try the Tres Leches cake.  Beforehand a friend of mine actually told me, and I quote, "Listen, their tres leches cake will have you ACT A FOOL".  She was right!  Well, we didn't act a fool but the cake was incredible!  It was so moist and with three types of milk used to make it, I guess it would be!  Delicious is an understatement!  It sat on a bed of sweet and airy creme fraiche and the entire dish was drizzled with caramel and topped with fresh strawberries. It's going to be a challenge not to order this cake every time I visit!  
We really enjoyed our dining experience at Chuy's.  The service was great and so was everything we had.  I forgot to mention earlier that we received complimentary Salsa Fresca and homemade tortilla chips.  The salsa had a nice kick to it and was uber flavorful!  We had it in rotation at the table.  I can definitely see this being a place to hang out with friends after work for a good drink and some good ole Tex-Mex!  Check them out the next time you're near the town center, you'll be happy you did!

There is something so magical about being in the presence of archaeological sites and remains.  It's like stepping into an old history book and using your imagination to see and feel what actually happened during ancient times.  Throughout my recent trip to Italy and Greece I was consistently in amazement at how massive some these structures were and bewildered at how they're still standing after thousands of years.  On my last day in Greece, we went to the Acropolis in Athens.  
The"High City" can be seen from several locations through out the city of Athens and because it's so high up, you can imagine the hike it took to get to the top.  Though this day was particularly scorching, the hike was well worth it! 
Before making our way up, the fashionista in me had to stop for pictures near the olive trees!
I bought this super cute sun hat before the trip and I was so thankful for my hat that day because the sun was literally beating down on us!  
 Thank God for the trees because they offered up a little shade as well!

 So what kind of teacher would I be if I didn't share a little history about Acropolis with you!?!?   Most of us are familiar with Greek mythology and the city of Athens is named after the Greek goddess, Athena who was the goddess of wisdom, courage, and civilization.  Acropolis was built in honor of her.
This is Propylaea, the entrance to the temple of Athena Nike.  This is the earliest temple built on Acropolis.  Walking up the Propylaea was extremely tricky because the ground still has original marble and it was very slippery.  
Of course the Parthenon is the quintessential Greek monument that most would think of when they think of Acropolis.  I have to admit, by the time I made it to the Parthenon, I was literally burning up so I snapped a picture and made my way back down the hill.  However, from what I did see, it was beautifully constructed with marble.  I can only imagine what it looked like in its prime.
Here is the Erechtheion located on the north side of the Acropolis which was considered very sacred.  According to Greek mythology, this temple was dedicated to Poseidon and Athena. It's said this is where a salt water well was formed after Poseidon struck his trident and where olive trees grew after Athena struck a rock with her spear.  
On the way back down I stopped to behold the Odeon of Herodes Atticus.  Located on a southwest slope of Acropolis, this is a steep slope theater that can house up to 5,000 people for music concerts.  
As a matter of fact, after it's restoration in the 50's, it is still used as a venue for concerts.  Artists such as Andrea Bocelli, Frank Sinatra, and Elton John have performed here.
I seriously, can't hardly wait until I can visit Greece again.  There was so much history and it's an absolutely beautiful country.....and the food is good!

If you're anything like me, you love breakfast at anytime of day!  I can not count how many times I've made pancakes, bacon, and eggs for dinner!  I mean, you're talking to the girl who eats waffles for a snack!  One of my favorite meals to make for a weekend breakfast or "breakfast at dinner", is a frittata.  Mostly because you can make a frittata with just about anything you have on hand.  It's the perfect solution for leftovers!  You all know I enjoy making meals that are quick, easy, and delicious and one of my favorite fridge staples is the Curly's Kansas City Style Brisket Burnt Ends.  This recipe is made with one of Curly's new RoadTrip Eats BBQ products, which is a perfect way to celebrate Curly's 30th birthday!  If you ask me, I think a 30th birthday is a HUGE milestone, so I decided to make a HUGE dish that will feed up to a family of 4 in 30 minutes or less!  My Curly's Brisket Burnt Ends and Veggie Frittata yields up to 8 servings, requires minimal ingredients, and takes no time at all to prepare.  You'll have a yummy dish on the table for your family by the time Jeopardy ends.
Here is what you'll need:
Ingredients
~ Curly's Kansas City Style Brisket Burnt Ends
~1 small red onion, diced
~1 cup of mushrooms
~9 oz. frozen chopped spinach, drained
~1 medium tomato
~2 cups of Cheddar/Monterrey jack cheese, shredded
~Seasoning of choice
Now for the fun and easy part!
1.)  Preheat oven to 375 degrees
2.)  In a large bowl, beat the eggs together with the seasoning of your choice.  Add a splash of milk. (optional)
3.) In a large skillet, add onion and mushrooms and saute until they've softened.  Once softened add the Curly's Kansas City Style Brisket Burnt Ends to heat and combine with onions and mushrooms.
4.)  After defrosting and draining the spinach, add to the mixture and carefully stir to combine.
5.)  Directly into the skillet with the bbq and veggie mixture, pour eggs and gently stir to combine.
6.) Add cheese and then place tomato slices on top.
7.)  Bake for 25 minutes. 
8.)  As soon as it's done, serve right out of the pan!

I LOVE pizza so much that I drove 25 miles from my house to get a free 10 inch pizza from 1000 Degrees, the new pizzeria in Fernandina.  I thought it was pretty generous of them to offer up free eats to all of their customers during their Grand Opening! It was totally worth the drive because the pizza was delicious!  It's Neapolitan (Roman)- style pizza and it's like a subway for pizza.  You can add as many toppings as you want!   
Several restaurants with this concept have popped up over the last few years and I have to admit this is one of the better ones I've tried. 
I love that they have outdoor and indoor seating.  It's definitely perfect to have the outdoor option for the warmer months.
Of course it's a brand new restaurant and everything was spick and span as to be expected.  I loved the exposed ceilings!  It added nicely to the charm of the pizzeria.  They also had great music playing through out the restaurant. I can't forget to mention the self-serve beer and wine wall.  I didn't get to indulge this particular day, but boy, oh boy,  I will make it a point to do so next time around.
But... on to the food!  According to the staff, the 1000 degree oven is from Italy and is equipped to cook your pizza, completely, with just two turns around which takes approximately 2 minutes!  
 I was a little skeptical as to whether my pizza would be cooked all the way through with just two rotations because I've had to request my pizza stay in ovens longer at similar restaurants.  I am pleased to share that my pizza was cooked to perfection within those two minutes.
I really enjoyed the pizza.  It was very flavorful and the cheese was perfectly melty and gooey!  I could've very well ate the entire thing in one sitting but exercised some restraint in an effort to maintain my girlish figure. I was definitely pleased and was happy to learn that they will making their appearance in different areas around Jacksonville this year so be on a look out!

I LOVE pizza so much that I drove 25 miles from my house to get a free 10 inch pizza from 1000 Degrees, the new pizzeria in Fernandina.  I thought it was pretty generous of them to offer up free eats to all of their customers during their Grand Opening! Baggy Chic

Hi Dolls, 

If you're anything like me when it comes to that time of the month and you're feeling extra bloated, you don't want to wear anything but pajamas, fuzzy slippers, and a head scarf while toting around a large spoon and tub of ice cream!  However, us fashionistas have to keep it together even on those days when we just don't feel like it!  On those days, I keep it cute with a comfortable, baggy,  but chic look that hides all of my imperfections and allows me to still be fabulous!  Paired with some cute accessories and fab pair of heels, you'll be ready to hit the town!  As soon as my outfit came together, I immediately felt better.   This just goes to show that when you look good, you feel good!
I have to take a moment, as always, to give recognition to these heels!  I absolutely adore them!

Hi Dolls!  Since the very first time I had M Shack at the St. John's Towncenter about three years ago, they have been popping up all over town.  Last weekend a few of my girls and I were in the Riverside area and decided to stop over at the M Shack in 5 points.  I love this location because there's ample parking, the ambiance is great, and I love the outdoor seating set-up!  It's not often I indulge in burgers but when I do, I want them to be bomb with all the fixings and all the flavor.  Knowing that M Shack wouldn't disappoint in those areas, I was pleased with our decision to dine there that evening.   
 I got the M burger that comes with your regular toppings (American Cheese, Lettuce, tomato, pickles) and "Shack Sauce"  which tastes like a mixture of mayo and ketchup.  I added the bacon onion compote because seriously, what's a burger without bacon and onions?  It gave the burger a hint of sweetness but was equally savory. They ask you how you'd like your burger cooked and I enjoy my burgers cooked medium for juiciness.  I also got a side of Old Bay fries and let...me...tell... you!  This seasoning is seriously amazing on these fries.  I would've never thought to season my fries at home with the seasoning we use for low country boils but it totally works!
The next time I visit M Shack I'm getting the Portobello Truffle Burger which is what one of my friends ordered.  It comes with bacon, smoked gouda, tomato relish, truffle portobello duxelles, and a balsamic glaze.  Did your mouth water because mine did when I saw her burger and discovered everything that came on it!
For all my vegan and vegetarian friends, they have options for you as well.  My girl Lala is a vegan so she ordered a tempeh burger with avocado and red onions.  They also offer veggie burgers, turkey burgers, blackened tilapia, crab cakes, and chicken breast so there is something here for everybody! 
So listen, there's nothing better than a juicy burger and fries with a classic shake to wash it all down with.  Yes, I'm a foodie and a lot of times I try foods that some would consider to be outside of the norm and I don't mind trying cuisines I've never had before but sometimes I just want to stick to what I love and I love Strawberry shakes.  
This was a glorious hand-spun shakes consisting of creamy soft serve vanilla ice cream with a house-made strawberry puree.  It was everything!  I will say, however, that the next time I'm feeling froggy I will indulge in the Pecan Pie shake or an "Adult" Bananas Foster Shake...if my stomach can take it!
Service was good and I love the fun and hip vibe this particular location has!  My girls and I sat there eating, drinking, and laughing until they literally started cutting off the lights lol!  I look forward to my next visit for more reasons than one and if you're ever in the mood for a good burger, fries, and milkshake, M Shack is where you want to go!

So I have a confession to make...I did not like the kimono trend at first.  I know, I know!  How could I not like the super versatile cover-up that can be dressed up or down?  Well, at first I thought  they looked too much like bath robes but I quickly learned that you have to wear a kimono over the right outfit for it to really make a fashion statement.
  Needless to say, kimonos are definitely on trend and I am searching for a few more in different colors to go with outfits I have planned in my head!
I love that you can virtually find a kimono in every color under the rainbow right now and the majority of them have some of the prettiest prints.  
So I have to take a moment for these heels!  I've been on a hunt for a pair of lucite heels that I could wear with a variety of things so when I saw these I knew I had to have them.  The fact that they were so comfortable to walk around in made me love them more.
Ok, back to the kimono...because most kimonos have colorful prints,  it's best to keep the outfit underneath simple.  To keep from clashing, I stuck to a white cami, white jeans, and nude sandals.  Too much color or mixed prints would take away from the beauty of a kimono.
The next time I wear it, I'm thinking a bodycon midi length dress in white or pink!  What do you guys think?  Let me know in the comments below!

Kimonos Are In
