What's Cooking w/ Trice: Chicken Tortilla Soup

So who likes soup any time of the year?  
*Raises hand slowly*
  To be quite honest, if I get the craving for soup even in the dead of summer, I'm going to have my soup!  Some people shy away from a good and hearty bowl of hot soup in the spring and summer months, claiming the weather to be too hot for the dish but ponder like your other food dishes hot right?  What's the difference?  Anywho, I had a taste for chicken tortilla soup and decided to whip up a batch of it last weekend.  It was such a hit I'm making it again this week in time for Memorial Day!
What I love most about this recipe is that it's a one-pot, hitter-quitter!  There's very little prep and I literally throw all of the ingredients in the pot and let it go!  To speed up the process I like to use Curly's Sauceless Pulled Chicken!  It's a time saver because I only have to wait for the chicken to heat through after my other soup ingredients come to a low boil!  This soup is done in no time and is unbelievably flavorful!  You all know I love a quick and delicious meal and this is it!  People will think you spent hours making it when in fact, you can get dinner on the table in 20 minutes!
Here's what you'll need:  
(2 packs) Curly's Sauceless Pulled Chicken
(2 TBS) Olive Oil
2 tsp each of:  Ground Cumin, Chili Powder, Garlic Powder, Oregano leaves, Creole seasoning, and
(15 oz.) Fire-Roasted Tomatoes
(15 oz.) Black Beans ~rinsed and drained~
(15 oz.) Sweet Corn ~rinsed and drained~
1 medium onion ~chopped~
1 red bell pepper ~chopped~
1 jalepeno or poblano pepper ~chopped~
4 cloves garlic ~minced~
(4 oz.) mild diced green chiles (ie. Rotel)
(48 oz.) Low-Sodium Chicken Broth
(10 oz.) mild enchilada sauce
(1 cup) Cilantro ~chopped~
1 Avocado ~diced~
 Tortilla Strips 
1.)  Saute onions, red bell pepper, and poblano/jalepeno peppers for 2-3 minutes.
2.) Add garlic and stir for another 2 minutes.
3.)  Add chicken broth, black beans, corn, fire-roasted tomatoes, and green chiles.  Stir to combine.
4.)  Add enchilada sauce and all of the dry seasonings.  Stir to combine and let it come to a boil.
5.)  Once the mixture has come to a boil add the two packages of Curly's Sauceless Pulled Chicken and heat through.
6.)  Once the chicken is completely cooked through, add cilantro, and the juice of one lime.  Mix well.
Look at this bite!  It was perfect!
7.)  Of course, you can't have chicken tortilla soup without tortilla strips.  You can buy them in a store or make them yourself, like I did.  It's really quick and easy to do.  Stack three flour tortillas then cut them into strips.  Halve the strips again then toss them in a little veggie oil and a pinch of sea salt and cook in a 450 degree oven for about 2-3 minutes.  
Once everything is complete, grab you a bowl, add the soup and garnish of avocado and tortilla strips, and enjoy!!! 
 Simple to make and delicious!
 My favorite part about making this dish is the amount of time I save by using the Curly's Sauceless Chicken.  Curly's has some of the best, authentic, hickory smoked BBQ and meat products available in stores!  Their products can be found in the refrigerated meat case of your local grocery store!
