What’s Cooking With Trice?!?!?! ( Bruschetta Tilapia)

Hey Dolls!

I haven’t done a “What’s Cooking w/ Trice” post in a while so I think it’s time for one!  Oh and guess what…. SCHOOL’S OUT FOR SUMMER!!!!  During the summer I tend to cook more because I have a little more time on my hands so I look forward to sharing more meals!  Tonight’s meal is another recipe I got from the lovely Monique at Divas Can Cook!  If you haven’t checked out her blog, please do because my girl can throw down!!!


I made Bruschetta Tilapia!  It’s easy, delicious, and good for you!  Here is what you’ll need:

Tilapia/Cherry Tomatoes/Juice From 1/2 lemon/Fresh Basil/Garlic/Red Onion/Mozzarella Cheese/Olive Oil/Seasoning/Rice


DIRECTIONS

 Preheat the oven to 350.

1.) Butter the bottom of a baking dish add your fish and squeeze the lemon juice over the fish.

2.) Season your fish to your liking.  Put the dish of fish in the refrigerator while you prepare everything else.

3.) Chop your cherry tomatoes, fresh basil, red onion, and garlic.

4.) Add the veggies to a bowl, drizzle in some olive oil, add a little salt and pepper, and mix well.  (This tastes so good all by itself!)

5.) Take the fish out of the fridge, add the veggie mixture on top of it and put the dish of fish and veggies in the oven for 20 minutes.

6.) Once the fish has cooked take it out and add your mozzarella cheese.

7.) Once you add the cheese, put it back in the oven until the cheese melts over the fish. (About 5 mins.)

8.) Once the cheese has melted, add the fish over a bed of brown rice and VOILA, dinner is served!

I enjoyed my first day of summer meal with a nice glass of white wine and it was DELICIOUS!!!

    Yep! I'll be making that tomorrow! I like being able to cook during summer break too! Most days during the school year, I'm too exhausted!
