What’s Cooking With Trice: Chicken Flautas

Hey Dolls!

So are any of you as crazy about Pinterest as I am?  Being the food lover I am, I’m constantly on the hunt for new recipes to try and Pinterest is my go to for pinning new meal ideas.  A few nights ago I decided to give on of the recipes on my Pinterest board a try, Chicken Flautas!

They turned out as delicious as they look! 


Ingredients:


* Boneless, Skineless Chicken Breasts (About 4)

* Baby Spinach 

 * Chicken Stock

* Burrito size tortillas (About 4-5)

* Mexican Blend Cheese

* Seasoning of Choice

* Jalepeno

1.) Season your chicken and poache in a skillet with chicken stock.

2.) While your chicken cooks, cut up your spinach to make 2-3 cups (It really shrivels up to nothing when it cooks).  If you have a jalepeno, chop it up and add it along with the spinach to a skillet with a little chicken stock and cook it.  I used green pepper sauce because I didn’t have a jalepeno.

3.) After your chicken cooks, let it cool for a few minutes then shred it with 3 forks.  At this point you can add a little more seasoning to taste.

4.) After you shred your chicken, cut your tortillas in half, and prepare a large baking sheet for assembly.

5.) On the long edge of the tortilla, spoon 2-3 spoonfuls of the chicken mixture, cheese, and spinach.  Roll it towards the curved edge.

6.) You should have 8-10 flautas.  Brush the top of each flauta with olive oil spread and put the sheet  in a 450 degree pre-heated oven and bake for 10-12 minutes.

Here is the end product and the best part about it is that they are low in calories!  They were yummy!
