Caprese Sandwich aka Adult Grilled Cheese

Hey Dolls,

I know I haven’t posted much fashion lately.  I guess you can say I’m in a bit of a fashion rut….but a girl still has to eat right!?!?!   With that being said, I am back with a quick and easy recipe.  I have been trying to eat healthier for the last few weeks and just completed a 10 day Daniel Fast that I will blog about a little later.  This particular fast required I consume no meat, sugar, or dairy.  I ended the fast last Friday but in an attempt to maintain a more health conscious diet, I’m going to try to do Meatless Mondays because I just can’t see giving it up all together…I love it too much.  Here is what I had this Monday, a Caprese sandwich or Grilled Margherita Sandwich!  It was so easy to make and oh so good! Check out the recipe below!

Ingredients:
2 slices Whole Grain French Bread
Fresh Mozzarella
Fresh Basil
1 clove of fresh garlic
Olive oil
Garlic seasoning and pepper

Directions:
1.) Rub fresh garlic on the inside of both slices of bread.
2.) Thinly slice mozzarella and place on one slice of bread.
3.) Thinly slice tomatoes and place on the bread.
4.) Sprinkle the tomatoes with garlic and pepper seasoning.
5.) Add a few slices of fresh basil .
6.) Add a few more slices of mozzarella and then the other slice of bread.
7.) Drizzle a little olive oil over the top of the bread and sprinkle with the garlic and pepper seasoning.
8.) Grill on both sides until the cheese is melted and the bread is golden brown.

This was so amazingly good that I wanted to make another one but I resisted.  This gives grilled cheese a whole new look.  Let’s just call the Caprese Sandwich an adult grilled cheese!

    I'm a big fan of sandwiches and yours looks amazing. I admire you for going on the fasting diet. I would have a very hard time giving up meat. Sugar and dairy, yes, but not meat. Good for you!Sam

    The sandwich looks delish!I did the Daniel Fast for about 7 days. I was already a vegetarian but those few days that I was on the fast help me to see that I could live without a whole lot of stuff that I thought I couldn't!
