My favorite time of year is the fall for so many reasons!
The weather is cooler, the leaves are starting to change, and football season is in full swing! I LOVE football season and everything that comes along with it, especially the tailgating because of…well…THE FOOD! We are in the heart of tailgating season and I have created a delicious, and easy to make tailgate recipe that will satisfy any hungry football fanatic! Using Curly’s RoadTrip Eats West Coast IPA Style Pulled Pork, I made these yummy pulled pork potato skins! If you prep ahead of time, they will be ready to go in time for the game!
Here’s What You Need:
Curly’s West Coast IPA Style Pulled Pork
8-10 small potatoes
Olive oil
Butter
Salt & Pepper
2-3 scallions (chopped)
Cheddar Cheese
Sour Cream
There are a few tricks that can make this dish ready to go in about 25-30 minutes!
* Preheat the oven to 400
* Cut 8-10 small potatoes in half, season with olive oil, salt, and pepper, then place them
cut side own on a cookie sheet.
* Cook for 15-20 minutes. You should be able to stick a fork through the potatoes easily.
* While potatoes are cooking, cut up scallions and heat up the pulled pork and butter,
Once the potatoes are cooked, let them cool for a few minutes then scoop out the potatoes leaving about 1/4 of the potato in the skin. (Save the scooped out potatoes for a nice mash later!)
Heat the oven up to 475.
Add a little more seasoning to the inside of the potatoes, brush the inside with butter and add back to the oven for a few minutes.
Take out the potatoes, add a generous scoop of the Curly’s pulled pork and cheese. Add back to the oven for a minute so that the cheese melts.
Take the potatoes out once the cheese has melted, add sour cream, and green onions, and ENJOY! This recipe is so easy and so delicious, people will think you spent all day in the kitchen!
