BBQ Pulled Chicken Lettuce Wraps

I just love the winter time!  With the holidays and cool weather, you can’t help but be in a happy mood.  There’s something so nostalgic about bundling up in front of the fireplace with a hot cup of cocoa and layering up with your favorite chunky sweater to brave the chilly outdoors temps during this time of year.  Comfort food is also high up on the list when the weather is cooler!  So much so, it can be pretty easy to pack on a few extra pounds when you’ve got layers of clothing to hide behind!  To help me stay on track during the winter, I love eating lettuce wraps.  They are guilt free, low in carbs, and high in flavor.  You can add just about anything you want to them.  The possibilities are limitless!  What’s even better is that they are quick and easy to make.  For this recipe I used Curly’s Pulled Chicken to make my lettuce wraps!  They were amazing and on the table in less than 20 minutes.

~Here’s What You Need To Make BBQ Pulled Chicken Lettuce Wraps~

* Curly’s Pulled Chicken

* 2 Cloves of Garlic (minced)

* Sesame Oil (2 TBSP)

* Butter Lettuce

* Shredded Carrot Sticks

* Green Onions (Thinly Chopped)

It is amazing how easy it is to make these bad boys!

Heat sesame seed oil in a skillet and add garlic to brown lightly.

Add the Curly’s Pulled Chicken, Carrot Sticks, and Green Onions to the skillet to heat through.  This will take no longer than 5 minutes.  Stir continuously.

Separate lettuce and add 1-2 spoonfulls of the mixture into the wraps.  At this point you can add more green onions and carrot sticks.  Ladies and Gentlemen…that is it!  This quick and easy meal will be a BIG dinner time favorite.  If you have any mixture left over, adding it over a bed of jasmine rice or using it to make a quesadilla would be delicious!  This mixture goes a long way and will taste great any way you slice it!

ingredients:

* Curly’s Pulled Chicken
