I love a great comfort meal but I usually reserve my belly room for those when it’s cold outside. During the hot summer months I tend to lean towards meals that are lighter with lots of flavor! Luckily, Mimi’s Cafe has the same thing in mind with their new Fresh Catch Summer Menu. Available through September 6th, Mimi’s Cafe is offering 5 new dishes and cocktails that will help fill you up while keeping those summer bodies in check! I stopped in to our local Mimi’s to check out the new fresh summer catch menu and share it with you! With each dish, I was sent on a flavor adventure that took me back to my summer vacay in the Caribbean! Each dish offered a taste of the tropics with beautifully crafted seafood dishes accented with citrus, pineapples, mangoes and so much more!
The Hawaiian Mahi-Mahi was my favorite dish! It was a light and simple dish of seared Mahi-Mahi, topped with Mimi’s handmade pineapple salsa, green beans, and cilantro-lime rice. This is one of those dishes I would try to recreate at home. If I did, I’d add some sort of buttery sauce on top. Nevertheless it was a tasty dish. This was the Summer Shrimp Salad made with two grilled shrimp skewers on a bed of mixed greens with grilled pineapple, mandarin oranges and strawberries finished in red wine shallot dressing. I added balsamic vinaigrette to my salad and it kicked the flavor up tremendously!
The Tropical Shrimp Ceviche was a perfect starter. It was made with grilled shrimp, Mimi’s handmade pineapple salsa, diced tomatoes, cilantro and fresh lime juice. The ceviche was served with warm, house-made tortilla chips, and avocado slices.
Also on the new fresh summer catch menu was the Citrus Chicken Salad made with diced lemon-grilled chicken, avocado, mandarin oranges, chopped walnuts and feta cheese tossed in red wine shallot dressing with mixed greens.
Of course no meal is complete with dessert and their Key West Lime Pie was the perfect ending. It was a sweet and tangy authentic Florida key lime pie with a granola crust, topped with whipped cream and granola crumbles.
To complement the new Fresh Summer Catch menu, Mimi’s new seasonal cocktail menu, where available, includes this delicious Summer Peach Lemonade. It has a fresh twist on a favorite with Seven Daughters Moscato and white peach, lemon and cranberry juices. It was very refreshing! The new cocktail menu also includes the Wildberry Daiquiri, made with fresh lime, strawberries, raspberries and blackberries; Mimi’s signature mimosas in pineapple, mango, white peach, or triple berry, each with their own split of Korbel California Champagne; and the Skinny Margarita, made with fresh lemon, lime and agave nectar. Overall, we really enjoyed our meal at Mimi’s Cafe! Everything was super light and fresh and I didn’t feel stuffed and heavy when we left!
