Coconut Curry Shrimp

Hi Dolls,

You guys know I am all about quick and easy meals you can make on a weeknight that is guaranteed to be delicious, filling, and ready to hit the table in 30 minutes or less.  One of my favorite dishes to make, that meets all of these requirements, is Coconut Curry Shrimp!  I literally takes about 25 minutes at the most, from start to finish and it’s so delicious!  

I recently received the Curry Spice Trio from Fresh Jax, a local organic spice blends company!  It came with yellow, green, and red curry blends!  

I typically use yellow curry in all of my curry dishes so I was excited for the opportunity to try the Red Thai Curry seasoning in my coconut curry shrimp dish this evening.

Overall, the ingredients needed for this dish are pretty minimal and with a little preparation, it’s ready in minutes!  Check out the recipe below!

Coconut Curry Shrimp

prep time: 10 minscook time: 15 minstotal time: 25 mins

ingredients:

* 1/2 lb. shrimp, peeled and deveined
* 2 TBP EVOO
* 2 TBP unsalted butter
*  FreshJax Red Thai Curry Seasoning
*  Salt and Pepper to Taste 
* 2 TBP crushed garlic
* 1/2 cup  Coconut Milk (unsweetened) 
* 1/4 cup heavy whipping cream
* 1 TBP cornstarch w/chicken stock
* 1 tsp. crushed red chili flakes
* green onions
* Jasmine rice served with shrimp

instructions

1.)  Heat up oil, butter, and crushed garlic.
2.)  Season peeled and deveined shrimp.  
3.) Add shrimp to pan and saute for 2-3 minutes per side. 
4.) Take out shrimp and sit to the side.
5.) Add heavy whipping cream and coconut milk to pan.  
6.) Heat through and add seasoning to liking.
7.) Add cornstarch/chicken stock mixture to thicken up sauce.  
8.) Add shrimp back to dish and heat through.  
9.) Once heated, add shrimp to dish and garnish with green onion.
10.) Enjoy!

NOTES:

* Tails can be removed or left on based on preference.  I left mine on for presentation purposes. 

* To prevent tough shrimp, don't cook longer than 3 minutes.
