Happy Wednesday Loves! I’ve got a few questions for you. Do you like Bacon Cheeserburgers? Of course you like bacon cheeseburgers! Have you ever had a bacon cheeseburger casserole? No? Perfect, you can now! I decided to try this low-carb, keto-friendly recipe from StaySnatched and it tastes just like a bacon cheeseburger with out the bun and I’m not mad at it what so ever! If you love the All-American favorite burger and you are seeking low-carb recipes, this is the one for you!
1.) To start off chop up 3-4 slices of bacon and cook the pieces of bacon bits. Reserve the crumbled bacon bits to the side for later.
2.) Season and brown 1 pound of ground chuck with 1 cup chopped onion and 2 cloves of minced garlic over a medium-high heat.
3.) To the ground chuck, add 1 tsp. Worcestershire sauce and 2 oz. of cream cheese. Stir until cream cheese is completely melted and incorporated well.
4.) In a medium sized bowl, combine 2 eggs, 1/2 cup of shredded cheddar cheese, 1/2 cup of shredded white cheddar cheese, 1/2 cup of heavy cream, and 2 tablespoons of mustard. Whisk these ingredients together well.
I told you this is a bacon cheeseburger as a casserole so you can’t forget the pickle!
5.) Of course this is totally optional if pickles aren’t your thing but for the full burger flavor, cut up one small Kosher dill pickle into bite size pieces. Once you do that, you’ll have all of the ingredients ready to assemble!
6.) Spray a medium sized baking dish with a little olive oil spray. Add the ground beef mixture to the bottom of the dish and spread it out evenly.
7.) Sprinkle the bacon bits and pickle bites over the ground beef mixture.
8.) Drizzle on the egg, cheese, and cream mixture.
9.) On top of everything, sprinkle on 1/2 cup of shredded cheddar cheese and 1/2 cup of white cheddar cheese.
10.) In a preheated 350 degree oven, bake the dish for 15-20 minutes until the cheese is golden brown and bubbly!
Viola! In a few short minutes, you’ll have all the makings of a yummy bacon cheeseburger with out all the guilt! This bacon cheeseburger casserole is the perfect low-carb, keto-friendly meal when you’re craving a juicy burger but are staying away from heavy carbs! The best part about it is that tastes great!
