At long last, Spring has arrived and the weather, at least in my neck of the woods, is finally cooperating! It has been absolutely beautiful outdoors lately and I couldn’t be more excited! There are so many reasons I love Spring! Besides warmer weather, open-toed shoes, and a new colorful wardrobe, I always look forward to March Madness! I love watching football in the Fall and basketball in the Spring and I usually entertain while I do it! During the games I enjoy making quick, easy, and delicious snacks to munch on and today I’ve got the perfect 20 minute game-day recipe that is great to serve when watching the games at home with friends and family. This is my recipe for Pulled Beef Crostinis! I love making crostinis because they’re cute and bite-sized, you can add just about anything you can fit on to the little slice of bread, and they always taste incredible. This time around I made them using Curly’s BBQ Pulled Beef and it taste just as great as I anticipated! These are sure to be a crowd-pleaser!

The ingredients are minimal and the total time from start to finish should take you no more than 20 minutes!
Here’s what you need:
- Curly’s Pulled Beef
- 1 Baguette
- Freshly shredded Parmesan
- Fresh Parsley
- 1 large garlic clove
- Extra Virgin Olive Oil
Directions:
1.) Cut the baguette into 1-1.5 inch slices at a slight diagonal. Turn on the high broiler on the over to get hot while you cut and prepare the baguette.

2.) With a basting brush, brush on the olive oil to each side of the baguette pieces.
3.) Place the baguette pieces on a cookie sheet and place in the oven for a few moments. You will definitely have to watch them to make sure they don’t burn. Once they get to your preferred level of golden brown, flip them over and let them brown on the opposite side.
While the crostinis brown in the oven, heat up the Curly’s Pulled Beef in the microwave for 3 minutes and set aside once it’s done.

4.) Once the baguette pieces are brown, take them out of the oven and immediately rub a fresh piece of garlic on each piece. This will give each crostini a delicious hint of garlic flavor.

5.) Add a fork full of the Curly’s Pulled Beef to each crostini. You can certainly add more than a fork full if you want.

6.) Sprinkle a generous amount of freshly shredded parmesan on to each of the pulled beef crostinis and pop them back into the oven, under the broiler, for a few moments to melt the cheese.

7.) The last step is to garnish each of the pulled beef crostinis with freshly chopped parsley and then enjoy!
