Grilled Chicken Margherita is the perfect week day meal that your family will love and best of all, will only take about 30 minutes to prepare! It’s full of flavor and ideal when cooking for house guests! It looks like a dish that takes a lot of time to prepare, but you’ll be in and out of the kitchen in no time! In addition to that, it would be the perfect dish to bring for a holiday potluck with the pretty red and green holiday colors!
My secret ingredient for this dish is Fresh Jax’s Grill Master seasoning! I typically use this seasoning whenever I’m grilling outdoors but for my chicken margherita, it kind of happened by accident. One day when I was planning on grilling chicken on the patio for a salad, it started raining, hence Florida summer weather! To improvise, I took my already seasoned chicken back into the house, pulled out my grill pan and decided to switch up the recipe all together. Instead of a grilled chicken salad, I whipped up a delicious grilled chicken margherita!
The rest of the ingredients needed for this dish are pretty minimal as well!
Here is what you’ll need:
4 Thinly sliced Chicken Breast (1 in. thickness)
2 TBSP Olive Oil
Seasoning of choice (I used Fresh Jax Grill Master, garlic powder, and Italian seasoning)
1/2 cup Cherry Tomatoes, halved
1/2 cup fresh Basil leaves, sliced
4 slices Fresh Mozzarella
1/2 cup Pesto
It is so easy to get side-tracked when you’re hungry and can only think about eating but it is so important to make sure that you follow proper precautions for food safety when preparing anything in the kitchen! 1.) Season your the chicken with the your seasoning choices. Again, the Grill Master seasoning I used from Fresh Jax is usually reserved for grilling burgers and steaks outdoors but it added a delicious hidden grill flavor to my chicken margherita!
2.) Add the olive oil to a pre-heated grill pan (medium heat) and cook the chicken on both sides about 6-8 minutes.
3.) Add a slice of fresh mozzarella cheese to the top of each piece of chicken and let it cook until melted. I put the entire grill pan under the broiler for a few minutes to get the cheesy melty and brown like I love!
While the cheese is melting under the broiler, prepare your cherry tomatoes.
4.) In a bowl, cut the cherry tomatoes in half. Add, salt and pepper, a squeeze of lemon juice, and the thin slices of basil. Toss together to mix.
5.) Take the chicken out of the oven, spoon on 2 TBSP of pesto to each chicken breast, then spoon on the tomato-basil mixture.
Voila! In 30 minutes, you have a beautifully prepared meal that everyone will love!
Make sure to serve it while hot!
I’ve eaten it alone, with a salad, or over angel hair pasta! It is delicious all three ways!
