When I think of all of the amazing meals my mom prepared for my brother and I growing up, lasagna is definitely high up on that list! The Cajun lasagna I prepared here is similar to my mom’s recipe but I added a little something-something to kick it up a notch. With a few extra ingredients, my family’s classic lasagna recipe has been spiced up a bit with some Creole flavors and it is sure to be a hit with anyone who tastes it! Here are the ingredients you’ll need:
- 1 lb. Ground Turkey or Ground Beef
- 1 lb. Andouille Sausage (diced)
- 2 Tbsp Tony Chachere’s Creole Seasoning
- 1 Tbsp Italian Seasoning
- 1 Tbsp garlic powder
- 8 lasagna noodles
- 1 small yellow onion (diced)
- 1 bell pepper (diced)
- 4 cloves garlic (chopped)
- 2 cups Sharp Cheddar (grated)
- 1 cup Parmesan
- 2 eggs (beaten)
- 1 cups Ricotta
- 1 cup Mozzarella
- 1 28 oz. can crushed tomatoes
- 1 6 oz. can tomato paste
- ½ tsp. chopped parsley (optional)
- ½ tsp. red pepper flakes (optional)
Directions:
1.) Preheat oven to 350 degrees
2.) Boil lasagna noodles in water until just before al dente (they will continue to cook in oven).
3.) Dice onion, bell pepper, garlic, and Andouille sausage. Saute the onion, bell pepper, and garlic until translucent and fragrant.

Meat Mixture:
3.) In the same skillet as the vegetables, add and brown Andouille sausage for 2 minutes.
4.) Season ground turkey (or ground beef) with Tony Chachere’s, Italian Seasoning, and Garlic Powder, brown, and drain. Add cooked ground turkey to the Andouille sausage and vegetables to combine.
5.) Mix crushed tomatoes and tomato paste into the meat mixture, set aside.

Cheese Mixture:
6.) In a separate bowl mix eggs, sharp cheddar, Mozzarella, and ricotta. (Lightly season with ½ tsp. Tony Chachere’s Creole Seasoning)

Assembly:
7.) In a medium-sized casserole dish, start assembly with meat mixture, then noodles, cheese mixture, and repeat. Sprinkle parmesan on top.

8.) Bake at 350 for 30 minutes or until the top layer of cheese is brown and bubbly!!!

9.) Garnish with chopped parsley and red pepper flakes. (optional) Enjoy this flavorful Cajun lasagna in no time at all!
