Happy “Family Friday”! I love cooking and it is even more enjoyable when I have family or friends to help me in the kitchen! I recently cooked Creamy Dijon Parmesan Chicken, one of my favorite meals, with some of my favorite people, and it was lots fun in the kitchen and lots of full and happy bellies afterwards.

This is the type of 20 minute meal that looks and tastes as though it took hours to prepare and is a hit every time it’s served! Check out the super easy recipe below!
Here are the ingredients you’ll need:
- 2 lbs. Boneless/Skinless chicken thighs
- 3-4 slices of bacon (diced)
- 1 cup. mushrooms (chopped) ***optional
- 2 cups baby spinach leaves
- 2 tbsp. Tony Chacheres BOLD Creole Seasoning
- 1 tsp fresh cracked pepper
- 1 tsp garlic powder
- 1 tsp. thyme
- 1 tsp. Rosemary
- 1 small yellow onion (diced)
- 4 cloves garlic (chopped)
- 2 tbsp. butter (unsalted)
- 1/3 cup Pinot Grigio (or dry white wine)
- 1 ½ cup Heavy Whipping Cream
- ¼ cup Parmesan (shredded)
- 2 tsp Dijon Mustard
This recipe is featuring the Tony Chachere’s BOLD Seasoning. It packs a little more heat than you may like, so feel free to substitute with Tony’s Original Creole Seasoning.
1.) Season chicken thighs on both sides with Tony Chachere’s BOLD, garlic powder, and freshly cracked pepper.
2.) Heat 1-2 tbsp. of olive oil in a large skillet and cook chicken on both sides. Transfer to a plate and set aside.
3.) To same skillet, add chopped bacon and fry until crispy. Transfer to a separate dish and drain bacon fat.
4.) Add butter, onions, and garlic to skillet and saute until transparent. Add rosemary and thyme and mix well until fragrant.
5.) Add Pinot Grigio to deglaze the skillet, scraping bits from the bottom of the skillet. Let the wine reduce.
6.) Add heavy whipping cream and Dijon mustard. Mix well and reduce heat.
7.) Once the sauce has thickened, add Parmesan and adjust seasoning to taste.
8.) Add spinach and mix until spinach wilts.
9.) Return chicken to the skillet and garnish with bacon.
10.) Serve and enjoy.
This recipe can be enjoyed as is, with rice, or with pasta! You can’t go wrong either way!
