Stuffed Bell Peppers, Fresh From Florida Farms

Stuffed Bell Peppers, Fresh From Florida Farms

I’ve been enjoying stuffed bell peppers since childhood and not much has changed in that department! My mom made them for our family all of the time and now it’s a nostalgic treat for me. I love how there are so many ways to customize the stuffing but for this recipe, I’m keeping it pretty traditional with ground beef. You guys know I love an easy, no fuss recipe that tastes great and these stuffed bell peppers I make, using Fresh From Florida green bell peppers, are ready in no time and taste amazing!

Directions:

1.) Preheat oven to 350°F. Clean and dry each bell pepper.

2.) Cut the top off of each bell peppers by 1 inch. Set the tops to the side. Clean the inside out of each bell pepper as much as possible without it losing its form.

3.) Place each bell pepper half in a baking dish or cookie sheet. Brush the bell peppers with 1 Tbsp oil and bake the bell peppers in a preheated oven for 10-15 minutes to soften. Remove after 10-15 minutes and set aside.

4.) While the bell peppers are baking, chop the tops of the green peppers, onion, and carrots.

5.) Heat a medium to large skillet over medium heat and add 1 Tbsp of extra virgin olive oil. Brown ground beef. Season to liking.

6.) Once the ground beef has browned, add the chopped green peppers, onions, and carrots to the skillet. Continue to sauté over medium heat until the onion is translucent.

7.) Add tomato paste, chicken or beef broth, and cooked rice to the skillet. Stir to combine. Adjust seasoning if needed.

8.) Add Mozzarella and Colby Jack Cheese to mixture

9.) Fill each bell pepper with the meat filling all the way to the top.

10.) Top each bell pepper evenly with the remaining cheese.

11.) Bake until cheese melts.

12.) Broil the stuffed bell peppers for 2-3 minutes if you’d like the cheese to brown on top.

13.) Garnish with parsley if you’d like and enjoy!
